Zucchini Creole Recipe

  • 2 large zucchini
  • 1/2 tablespoon butter
  • 1 teaspoon olive oil
  • 1/2 cup celery, chopped
  • 1/4 cup onion, chopped
  • 1/4 cup bell pepper, chopped
  • 2 cloves garlic
  • 2/3 cup Roma tomato, seeded and chopped
  • 2 teaspoons Cajun seasoning
  • 1 dash Tabasco sauce
  • salt and pepper, to taste
  1. Trim the zucchini and cut into cubes. Cube the tomatoes eliminating most of the seeds.
  2. In a skillet over medium-high heat, add the butter and olive oil. Add the onion, celery, bell peppers and garlic. Saute for about 2 minutes. Add the zucchini, tomatoes, Tabasco and herbs. Saute until zucchini are tender.
  3. Taste test and add salt pepper or more Tabasco as desired.
