Zucchini Creole Recipe
- 2 large zucchini
- 1/2 tablespoon butter
- 1 teaspoon olive oil
- 1/2 cup celery, chopped
- 1/4 cup onion, chopped
- 1/4 cup bell pepper, chopped
- 2 cloves garlic
- 2/3 cup Roma tomato, seeded and chopped
- 2 teaspoons Cajun seasoning
- 1 dash Tabasco sauce
- salt and pepper, to taste
- Trim the zucchini and cut into cubes. Cube the tomatoes eliminating most of the seeds.
- In a skillet over medium-high heat, add the butter and olive oil. Add the onion, celery, bell peppers and garlic. Saute for about 2 minutes. Add the zucchini, tomatoes, Tabasco and herbs. Saute until zucchini are tender.
- Taste test and add salt pepper or more Tabasco as desired.
