Yummy Yam and Pineapple Casserole Recipe

  • 6 large yams
  • 2 (8 ounce) cans crushed pineapple, with juice
  • 1/2 pound golden currants
  • 1/2 teaspoon ground cinnamon
  • 1 2/3 cups miniature marshmallows
  1. Cook yams in a large pot of salted water until tender, about 20 to 30 minutes. Dice the yams and place into a 9×13 inch baking dish.
  2. Preheat oven to 350 degrees F (175 degrees C).
  3. Stir pineapple, currants and cinnamon into the casserole dish. Sprinkle marshmallows over the casserole.
  4. Bake in a preheated 350 degrees F (175 degrees C) oven for 35 minutes.
