Wild Mushroom Quesadilla Recipe

  • 4 whole-wheat tortillas
  • 4 tablespoons goat cheese
  • 1 cup sauteed mushrooms
  • Red pepper flakes or Tabasco, to taste
  1. Preheat oven to 400 degrees F. Place two tortillas on a nonstick baking sheet. Sprinkle each with 1 tablespoon cheese, spreading the cheese evenly.
  2. Spread mushroom mixture evenly over cheese. Top with remaining cheese and red pepper or Tabasco. Cover each tortilla and filling with a second tortilla.
  3. Bake for 10 to 12 minutes until cheese is melted throughout and tortilla edges are crisp. Cut into into four to eight wedges and serve with salsa and low-fat sour cream.
