- 4 whole-wheat tortillas
- 4 tablespoons goat cheese
- 1 cup sauteed mushrooms
- Red pepper flakes or Tabasco, to taste
- Preheat oven to 400 degrees F. Place two tortillas on a nonstick baking sheet. Sprinkle each with 1 tablespoon cheese, spreading the cheese evenly.
- Spread mushroom mixture evenly over cheese. Top with remaining cheese and red pepper or Tabasco. Cover each tortilla and filling with a second tortilla.
- Bake for 10 to 12 minutes until cheese is melted throughout and tortilla edges are crisp. Cut into into four to eight wedges and serve with salsa and low-fat sour cream.
