- 2 gallons cold water
- 3 cups apple juice
- 1 cup brown sugar
- 1 cup kosher salt
- 1 orange, peeled
- 1/4 cup chopped fresh rosemary
- 2 tablespoons whole black peppercorns
- 1 1/2 tablespoons minced garlic
- 1 1/2 teaspoons whole allspice berries
- 1 1/2 teaspoons chopped crystallized ginger
- 5 bay leaves
- Combine water, apple juice, brown sugar, kosher salt, orange peel, rosemary, peppercorns, garlic, allspice, ginger, and bay leaves in a stock pot; bring to a gentle boil. Remove from heat and cool to room temperature.
