- 1 (1 pound) pork tenderloin, cooked and cut into bite-size pieces
- 2 medium tomatoes, cored and diced
- 1 large scallion, trimmed and chopped
- 1/4 cup sliced pimiento-stuffed olives
- 1 large celery rib, trimmed and chopped
- 1 tablespoon minced fresh basil
- 2 cups cooked Wacky Mac® (prefer Veggie Spirals), rinsed under cold water; drained well
- 2 tablespoons olive oil, plus
- 1 teaspoon olive oil
- 4 teaspoons white wine vinegar
- 1/4 teaspoon crushed dried oregano
- 1 serrano chile, cored, seeded and minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Combine pork, tomatoes, scallion, olives, celery and basil in large salad bowl. Add cooked Wacky Mac; toss gently but well.
- Stir together olive oil, vinegar, oregano, chile, salt and pepper in small bowl. Pour over salad just before serving. Toss well.
