- 1 tablespoon olive oil
- 1 small onion, quartered lengthwise, thinly sliced widthwise
- 1 large garlic clove, minced
- 1 cup sliced mushrooms
- 12 ounces cooked chicken-based mild Italian sausage, sliced 1/4-inch thick
- 1/2 teaspoon crushed dried oregano
- 1/2 teaspoon crushed red pepper flakes or to taste
- 3 medium plum tomatoes, cored and diced
- 1/4 cup dry white wine or chicken broth
- 1/4 teaspoon salt or to taste
- 1/4 teaspoon pepper
- 2 cups Wacky Mac® (prefer Veggie Spirals), cooked according to package directions, well drained
- 1/2 cup thinly sliced baby fresh mozzarella balls (see note)
- Heat oil in very large nonstick skillet over medium heat. Add onion, garlic and mushrooms. Cook for 7 to 10 minutes, stirring frequently, or until vegetables are tender. Stir in sausage, oregano and red pepper flakes. Brown sausage for 2 to 3 minutes, stirring occasionally. Add tomatoes and wine. Cook over medium-high heat for 2 minutes, or until tomatoes are pulpy, stirring frequently. Season with salt and pepper. Stir in Wacky Mac and heat through over medium heat. Scatter mozzarella on top. Heat through for 1 to 2 minutes.
