Vegan Mediterranean Salad Recipe

  • Dressing:
  • 1/4 cup extra-virgin olive oil
  • 1 lemon, juiced
  • 1 teaspoon garlic powder, or more to taste
  • salt and ground black pepper to taste
  • Salad:
  • 1 red bell pepper, diced
  • 1 green bell peppers, diced
  • 3 Persian cucumbers, diced
  • 4 tomatoes, chopped
  • 4 radishes, chopped, or more to taste
  • 2 kosher dill pickles, chopped
  • 3 green onions, sliced, or more to taste
  1. Whisk olive oil, lemon, garlic powder, salt, and black pepper in a large bowl. Add red bell pepper, green bell pepper, cucumbers, tomatoes, radishes, dill pickles, and green onions; toss to combine. Let marinate in the refrigerator until flavors combine, 10 to 15 minutes.
