- 150g/5oz long grain rice
- 150ml/5fl oz milk
- ½ vanilla pod, split
- 1 tbsp brown sugar
- 75ml/2½fl oz double cream
- 2 oranges, peeled and segmented
- 1 tbsp honey
- 1 tsp sesame seeds
- 1 sprig fresh mint
- icing sugar, for dusting
- Place the rice, milk, vanilla pod and sugar into a small pan and bring to a simmer. Cover with a lid and cook for 7-8 minutes, or until the rice is tender, then stir in the double cream. Remove the vanilla pod from the pan (it can be rinsed and used again).
- In a small bowl, mix the orange segments together with the honey and sesame seeds.
- Spoon the rice pudding into a serving bowl and place the honey oranges on top. Garnish with a sprig of mint and a dusting of icing sugar.
