Two Potato Hash Recipe

  • 2 tablespoons vegetable oil
  • 1 large yellow onion, chopped
  • 1 large russet potato, peeled and cut into 1/2-inch cubes
  • 1 large sweet potato, peeled and cut into 1/2-inch cubes
  • 1 teaspoon dried rosemary, crumbled
  • 3/4 cup water
  • 1/2 teaspoon Worcestershire sauce
  • Salt and pepper
  1. Heat oil in a wide nonstick frying pan over high heat. Add onion, russet potato, and sweet potato; cook, stirring often, until vegetables are browned (about 8 minutes).
  2. Add rosemary and water. Stir to scrape browned bits free from pan bottom; then reduce heat, cover, and simmer until potatoes are tender to bite (about 5 minutes). Stir in Worcestershire sauce; season to taste with salt and pepper.
