- 1 1/2 cups uncooked instant rice
- 1 cup orange juice
- 1 cup pineapple chunks
- 1/2 cup water
- 1 tablespoon vegetable oil
- 1 tablespoon fresh cilantro, chopped
- Salt and pepper, to taste
- In a saucepan, bring orange juice and water to a boil. Stir in the rice, pineapple, salt, pepper and oil. Reduce heat; cover and cook for 5-8 minutes or until liquid is absorbed.
- Remove from heat and let stand for 5 minutes.
- Toss rice with chopped cilantro and serve.
