Tomato and spinach soup Recipe

  • dash olive oil
  • ¼ onion, finely chopped
  • 75ml/2½fl oz tomato passata (sieved tomatoes)
  • 300ml/½ pint hot vegetable stock
  • 125g/4½oz fresh spinach leaves
  • salt and freshly ground black pepper
  1. Heat the olive oil in a saucepan, add the onion and fry until softened.
  2. Add the passata, stock, spinach, salt and freshly ground black pepper and simmer for 3-4 minutes. Blend with a hand blender until smooth.
  3. To serve, pour into a serving bowl.
