- dash olive oil
- ¼ onion, finely chopped
- 75ml/2½fl oz tomato passata (sieved tomatoes)
- 300ml/½ pint hot vegetable stock
- 125g/4½oz fresh spinach leaves
- salt and freshly ground black pepper
- Heat the olive oil in a saucepan, add the onion and fry until softened.
- Add the passata, stock, spinach, salt and freshly ground black pepper and simmer for 3-4 minutes. Blend with a hand blender until smooth.
- To serve, pour into a serving bowl.
