Tofu Tuna Recipe

  • 2 tablespoons vegetable oil
  • 1 onion, minced
  • 2 stalks celery, minced
  • 1 (12 ounce) package silken tofu
  • 3 tablespoons mayonnaise
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dill weed
  • 1 (5 ounce) can tuna, drained and flaked, or more to taste
  1. Heat oil in a skillet over medium-high heat; saute onion and celery until softened, 5 to 10 minutes.
  2. Combine tofu, mayonnaise, lemon juice, mustard, and dill weed in a bowl; mash with a potato masher until tofu is smooth and mixture is combined. Fold tuna into tofu mixture.
  3. Stir tofu-tuna mixture into onion mixture; cook and stir until heated through, 5 to 10 minutes.
