Toasted Orzo Pilaf Recipe

  • 1 teaspoon olive oil
  • 1/2 cup orzo
  • 1 scallion, sliced
  • 1 clove garlic, minced
  • 1 cup chicken broth
  • Salt and pepper to taste
  1. In a large skillet, heat oil on medium high. Add orzo, scallions, and garlic. Cook, stirring occasionally, until orzo is golden brown, about 4 minutes.
  2. Add broth and salt and pepper. Cover, lower heat, and simmer until broth is absorbed and orzo is tender, about 15 minutes.
