- 2 tbsp olive oil
- ½ small swede, peeled and cut into small cubes
- ½ baking potato, peeled and cut into small cubes
- 2 garlic cloves, peeled, chopped
- sprig fresh rosemary
- 3 sprigs fresh thyme
- handful broccoli florets
- salt and freshly ground black pepper
- Preheat the oven to 200C/400F/Gas 6.
- Heat the oil in an ovenproof pan and gently fry the swede, potato, garlic and herbs for 6-8 minutes, stirring regularly.
- Add the broccoli florets, season, to taste, with salt and freshly ground black pepper, then transfer to the oven to cook for a further 8-10 minutes, or until the vegetables are tender.
