Thyme and garlic-roasted vegetables Recipe

  • 2 tbsp olive oil
  • ½ small swede, peeled and cut into small cubes
  • ½ baking potato, peeled and cut into small cubes
  • 2 garlic cloves, peeled, chopped
  • sprig fresh rosemary
  • 3 sprigs fresh thyme
  • handful broccoli florets
  • salt and freshly ground black pepper
  1. Preheat the oven to 200C/400F/Gas 6.
  2. Heat the oil in an ovenproof pan and gently fry the swede, potato, garlic and herbs for 6-8 minutes, stirring regularly.
  3. Add the broccoli florets, season, to taste, with salt and freshly ground black pepper, then transfer to the oven to cook for a further 8-10 minutes, or until the vegetables are tender.
