Thai-style noodle salad Recipe

  • 1 tbsp olive oil
  • 1 red chilli, chopped
  • 1 garlic clove, chopped
  • 2.5cm/1in piece root ginger, peeled and grated
  • 3 small bulbs pak choi, leaves separated
  • 2 tbsp soy sauce
  • 2 tsp sesame oil
  • ½ lime, juice only
  • 150g/5½oz dried egg noodles, cooked according to packet instructions
  • lime wedges, to garnish
  1. Heat the oil in a wok or large frying pan, add the chilli, garlic and ginger and stir fry for one minute.
  2. Add the pak choi and stir fry for 1-2 minutes, or until beginning to wilt.
  3. Add the soy sauce, sesame oil and lime juice and simmer for 1-2 minutes.
  4. Add the cooked noodles and stir well.
  5. To serve, place the salad into a serving bowl and garnish with lime wedges.
