- 1 tbsp olive oil
- 1 red chilli, chopped
- 1 garlic clove, chopped
- 2.5cm/1in piece root ginger, peeled and grated
- 3 small bulbs pak choi, leaves separated
- 2 tbsp soy sauce
- 2 tsp sesame oil
- ½ lime, juice only
- 150g/5½oz dried egg noodles, cooked according to packet instructions
- lime wedges, to garnish
- Heat the oil in a wok or large frying pan, add the chilli, garlic and ginger and stir fry for one minute.
- Add the pak choi and stir fry for 1-2 minutes, or until beginning to wilt.
- Add the soy sauce, sesame oil and lime juice and simmer for 1-2 minutes.
- Add the cooked noodles and stir well.
- To serve, place the salad into a serving bowl and garnish with lime wedges.
