- 1 container Minute® Ready to Serve – Jasmine Rice
- 1/4 cup coconut milk
- 1 teaspoon curry powder
- 1 cup Asian-style frozen vegetables, thawed
- 1/4 cup cooked shredded chicken
- 1 tablespoon peanuts, crushed
- 1 tablespoon prepared chutney (optional)
- Prepare rice according to package directions.
- In a small microwave-safe bowl combine coconut milk and curry powder. Add vegetables and chicken. Microwave on HIGH 2 minutes.
- Fold in rice. Top with peanuts and chutney, if desired.
