- 3 1/2 ounces cooked chicken breast, cubed
- 1 1/2 tablespoons chopped, seeded cucumber (with peel)
- 1 tablespoon chopped mango
- 1 tablespoon chopped red onion
- 1 tablespoon light mayonnaise
- 1/2 teaspoon tandoori paste
- 1/2 teaspoon fresh-squeezed lime juice
- 2 slices whole-wheat or whole-grain bread
- In a medium bowl, mix all ingredients except bread until well combined. Place salad between bread slices.
