Tandoori Chicken Salad Sandwich Recipe

  • 3 1/2 ounces cooked chicken breast, cubed
  • 1 1/2 tablespoons chopped, seeded cucumber (with peel)
  • 1 tablespoon chopped mango
  • 1 tablespoon chopped red onion
  • 1 tablespoon light mayonnaise
  • 1/2 teaspoon tandoori paste
  • 1/2 teaspoon fresh-squeezed lime juice
  • 2 slices whole-wheat or whole-grain bread
  1. In a medium bowl, mix all ingredients except bread until well combined. Place salad between bread slices.
