- 1 (10 ounce) package fresh spinach, torn
- 1 (11 ounce) can mandarin oranges, drained
- 10 cherry tomatoes, halved
- 1 cup sliced fresh mushrooms
- DRESSING:
- 1/3 cup sugar
- 3 tablespoons cider vinegar
- 1 tablespoon honey
- 1/2 teaspoon dried minced onion
- 1/2 teaspoon celery seed
- 1/2 teaspoon ground mustard
- 1/2 teaspoon paprika
- 1/2 teaspoon lemon juice
- 1/2 cup vegetable oil
- 1 (2.8 ounce) package French-fried onions
- In a large salad bowl, toss spinach, oranges, tomatoes and mushrooms; set aside. In a microwave-safe bowl, combine first eight dressing ingredients.
- Microwave on high for 1 to 1-1/2 minutes. Stir until sugar is dissolved. Whisk in oil. Drizzle over salad and toss to coat. Sprinkle with onions. Serve immediately.
