Sweet Potato and Apple Latkes with Ginger Orange Dipping Sauce Recipe

  • 1 Granny Smith apple, peeled
  • 1 sweet potato, peeled
  • 1 large egg, blended
  • 1 1/2 tablespoons chopped thyme leaves
  • 1 teaspoon curry powder
  • 1-tablespoon flour
  • 1/2 cup panko
  • Canola oil (for frying)
  • 1/2 cup orange marmalade
  • 1 tablespoon water
  • 2 teaspoons fresh lime juice
  • 1 garlic clove
  • 2 teaspoons soy sauce
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon minced peeled fresh ginger
  1. For Latkes:
  2. Using coarse grater blade on box grater, shred apple. Transfer to paper towels; squeeze very dry. Transfer to large bowl. Shred potato; add to apple. Mix in next 4 ingredients, then Panko and a sprinkle of black pepper.
  3. Coat bottom of large sauté pan with oil; heat over medium heat. Place 1/4 cupful of the latke mix into skillet; flatten with spatula to 1/2-inch thickness. Sauté until nicely golden and cooked, about 4 minutes per side. Serve warm with dipping sauce.

  5. Purée all ingredients in a blender until smooth.
