- 2 quarts popped corn
- 1/2 cup dry roasted peanuts, chopped (optional)
- 1/4 cup SPLENDA® No Calorie Sweetener, Granulated
- 2 tablespoons water
- 1/4 cup dark corn syrup
- 2 tablespoons butter
- Preheat oven to 200 degrees F. Spread popped corn and peanuts in a jelly roll pan. Place in warm oven.
- Combine SPLENDA(R) Granulated Sweetener, water, corn syrup, and butter in a heavy saucepan; cook, stirring constantly, over medium-high heat, until SPLENDA(R) Granulated Sweetener dissolves. Bring mixture to a rolling boil; boil 3 minutes. Pour hot syrup over corn and peanuts, stirring well with a wooden spoon. Grease hands with butter, and shape mixture into balls. Place on waxed paper to dry. Wrap in plastic wrap; store in a cool, dry place.
