- 1 1/2 cups flour
- 1/4 cup cornstarch
- 1/2 teaspoon baking powder
- Salt
- 1/2 cup Filippo Berio Extra Light Olive Oil
- 1/3 cup sugar
- 1 egg, beaten
- 2 teaspoons grated lemon zest
- On a sheet of waxed paper, combine the flour, cornstarch, baking powder and a pinch of salt; set aside.
- In a mixing bowl, combine the oil, sugar, egg and lemon zest until smooth. Add the dry ingredients. Mix until all dry ingredients are absorbed. Shape into a smooth disk.
