- 4 free-range eggs
- 2 free-range egg yolks
- 25g/1oz caster sugar
- 50ml/2fl oz double cream
- 25g/1oz unsalted butter
- 3 thick slices brioche
- Place the eggs, egg yolks, caster sugar and cream into a large bowl and whisk together.
- Melt the butter in a large frying pan over a medium heat.
- Dip the brioche in the egg mixture then place into the frying pan and fry for two minutes on each side, until golden.
- To serve, place onto a warm plate.
