Sweet baked mango and lime bruschetta Recipe

  • 1 slice crusty white bread
  • 25g/1oz butter, melted
  • ½ mango, peeled and sliced
  • 1 tsp caster sugar
  • 1 lime, zest and juice
  • 1 tbsp double cream
  • icing sugar, to dust
  • lime wedges
  1. Preheat the oven to 180C/350F/Gas 4.
  2. Dip the slice of bread into the melted butter to coat and place onto a baking sheet. Top with the sliced mango and sprinkle with caster sugar, lime zest and juice. Place into the oven and bake for five minutes.
  3. Remove from the oven and place onto a serving plate. Drizzle with cream, dust with icing sugar and garnish with lime wedges. Serve immediately.
