- 1 slice crusty white bread
- 25g/1oz butter, melted
- ½ mango, peeled and sliced
- 1 tsp caster sugar
- 1 lime, zest and juice
- 1 tbsp double cream
- icing sugar, to dust

- Preheat the oven to 180C/350F/Gas 4.
- Dip the slice of bread into the melted butter to coat and place onto a baking sheet. Top with the sliced mango and sprinkle with caster sugar, lime zest and juice. Place into the oven and bake for five minutes.
- Remove from the oven and place onto a serving plate. Drizzle with cream, dust with icing sugar and garnish with lime wedges. Serve immediately.
