- 12 Tyson® Individually Fresh Frozen Boneless, Skinless Chicken Tenderloins
- 2 tablespoons vegetable oil
- 1 (16 ounce) bag fresh stir-fry vegetables
- 1 (8 ounce) can pineapple chunks, drained, reserving 2 tablespoons pineapple
- 1 cup sweet and sour sauce
- 4 cups hot cooked rice
- 1/2 cup sliced green onions
- PREP: CLEAN: Wash hands. Remove protective ice glaze from frozen chicken by holding under cool running water for 1 to 2 minutes. Cut chicken into 1-inch pieces. CLEAN: Wash hands.
- COOK: Heat oil in large skillet or wok. Add chicken and cook over medium-high heat 8 to 10 minutes or until light brown. Add vegetables, pineapple and reserved pineapple juice. Cover and cook 5 to 8 minutes or until vegetables are crisp-tender and internal juices of chicken run clear. (Or insert instant-read meat thermometer in thickest part of chicken. Temperature should read 170 degrees F.) Stir in sweet and sour sauce. Stir green onions into cooked rice.
- SERVE: Serve chicken vegetable mixture over rice.
- CHILL: Refrigerate leftovers immediately.
