- 2 tablespoons light corn syrup
- 4 1/2 teaspoons white or golden balsamic vinegar
- 1 vanilla bean, split and seeds scraped out and reserved
- Salt to taste
- 4 firm-ripe apricots, pitted and cut into wedges
- 2 firm-ripe peaches, peeled, pitted, and cut into wedges
- In a small bowl, whisk together corn syrup, balsamic vinegar, vanilla seeds, and salt. (Reserve vanilla bean for another use.)
- In a large bowl, combine apricots and peaches. Drizzle dressing over fruit and toss gently.
