Summer Stone Fruit Salad with Vanilla Vinaigrette Recipe

  • 2 tablespoons light corn syrup
  • 4 1/2 teaspoons white or golden balsamic vinegar
  • 1 vanilla bean, split and seeds scraped out and reserved
  • Salt to taste
  • 4 firm-ripe apricots, pitted and cut into wedges
  • 2 firm-ripe peaches, peeled, pitted, and cut into wedges
  1. In a small bowl, whisk together corn syrup, balsamic vinegar, vanilla seeds, and salt. (Reserve vanilla bean for another use.)
  2. In a large bowl, combine apricots and peaches. Drizzle dressing over fruit and toss gently.
