- 1/2 cup shredded Monterey Jack cheese
- 1 tablespoon olive oil
- 1 large onion, chopped
- 5 red cherry peppers, chopped
- 4 (6 ounce) sirloin steaks, trimmed of fat
- Freshly ground black pepper
- Mix the cheese, oil, onion, and peppers. Slice open one side of each steak, creating a pocket. Stuff with 1/4 of the pepper mixture and fasten with a toothpick.
- Season the steaks with pepper. Grill or broil to desired doneness.
