Strawberry meringue ice cream Recipe

  • 125ml/4fl oz double cream
  • 2 tbsp natural yoghurt
  • 4 tsp icing sugar
  • 4 large strawberries, mashed
  • 1 ready-made meringue nest
  1. Whisk the cream in the bowl until soft peaks form when the whisk is removed.
  2. Whisk in the yoghurt and icing sugar. Stir in the strawberries.
  3. Crush the meringue into the bowl and stir together gently.
  4. Transfer the mixture to a freezerproof container and freeze for at least two hours.
  5. Allow to soften slightly before serving.
