- 1 cup UNCLE BEN'S® INSTANT Whole Grain Brown Rice (10 minute cook)
- Nonstick cooking spray
- 2 tablespoons cornstarch
- 1/4 cup lite soy sauce
- 2 skinless, boneless chicken breasts, cut into thin strips
- 1 cup sugar snap peas
- 1/2 cup red bell pepper, cut into strips
- 1/2 cup carrots, cut into strips
- Cook rice according to package instructions.
- Combine cornstarch and water until smooth. Add soy sauce and set aside.
- Apply cooking spray to non-stick skillet. Add chicken breast and cook 3-4 minutes until almost completely cooked.
- Add vegetables and soy sauce mixture. Serve stir-fry over rice.
