Stir fry chicken and vegetable noodles Recipe

  • 100g/3½oz chicken, sliced
  • 2 tbsp sesame oil
  • 1 lime, juice only
  • 3 tbsp coriander, chopped
  • 100ml/3½fl oz vegetable stock
  • 2 tbsp soy sauce
  • 150g/5¼oz plain flour
  • 2 free-range eggs
  • 25ml/1 fl oz water
  1. For the chicken stir fry, place the chicken in a hot wok with the sesame oil. Fry for 3-4 minutes.
  2. Add the lime juice, coriander, vegetable stock and soy sauce.
  3. For the noodles, mix the plain flour with the eggs and water to form a smooth dough.
  4. On the pasta machine place the noodle dough onto the fine noodle setting. Create your noodles by feeding the pasta through the machine slowly.
  5. Now place the noodles into the wok and continue to cook for five minutes.
  6. Serve in a large bowl.
