Stir-fried prawns and pak choi with lime, soy and coriander Recipe

  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • ½ onion, finely sliced
  • 1 red chilli, finely chopped
  • 2 pak choi, finely sliced
  • ½ lemon, juice and zest
  • ½ orange, juice and zest
  • ½ lime, juice and zest
  • 2 tbsp soy sauce
  • 3 raw king prawns, shells removed
  • 3 tbsp chopped fresh coriander
  • 1 lime, cut into quarters, one side of each dusted with paprika
  • 1 small handful coriander leaves
  1. Heat the sesame and vegetable oils in a wok and fry the onion and chilli for 2-3 minutes.
  2. Add the pak choi, lemon, orange and lime juice and zest and soy sauce and cook for a further two minutes, or until the juice is starting to reduce.
  3. Add the prawns and cook until they turn pink. Stir in the chopped coriander.
  4. To serve, pile the stir-fry onto a serving plate and garnish with the paprika-dipped lime wedges and more coriander.
