Stir-fried lamb with onion, cashews and redcurrants Recipe

  • dash olive oil
  • 100g/3½oz lamb chop, bone removed, sliced
  • ½ onion, sliced
  • 1 small red pepper, sliced
  • pinch chilli flakes
  • 2 tbsp soy sauce
  • 2 tbsp cashew nuts, toasted
  • 1 pak choi, halved
  • 2 tbsp redcurrants, stalks removed, to serve
  1. Heat the olive oil in a pan, add the sliced lamb and fry for 2-3 minutes, or until browned.
  2. Add the onion and red pepper and stir fry over a high heat for two minutes.
  3. Add the chilli flakes, soy sauce, a splash of boiling water, cashew nuts and pak choi and stir fry for 1-2 minutes.
  4. To serve, spoon into a bowl and garnish with redcurrants.
