- 115g/4oz sugar
- 115g/4oz butter
- 2 eggs
- 115g/4oz self-raising flour
- 1 orange, zest only
- 1 lemon, zest only
- 4 tbsp honey
- 1 tbsp pecan nuts
- whipped cream, to serve
- 3 tbsp apple sauce, to serve
- Beat the sugar and butter together.
- Add the eggs and fold in the flour.
- Add the orange and lemon zest.
- Grease a small, heat-resistant glass pudding bowl, then drizzle the honey inside the bowl.
- Pour the pudding mixture into the bowl.
- Cover the bowl with cling film and microwave the bowl on high for 4-5 minutes, or until the sponge is cooked.
- Remove sponge from microwave and discard the cling film.
- Tip the sponge out onto a flat plate.
- Top sponge with combined whipped cream and apple sauce and the nuts and serve while still hot.
