Squid and banana salad Recipe

  • 3 tbsp groundnut oil
  • 450g/1lb fresh squid, cleaned, cut into strips
  • 2-4 fresh chillies (green or red), chopped
  • ½ orange, zest and juice only
  • ½ lemon, zest and juice only
  • 3 tbsp sunflower oil
  • 1 tsp white wine vinegar
  • salt and freshly ground black pepper
  • 3 bananas, peeled, chopped
  • 3 tbsp sesame seeds, toasted in a dry frying pan
  1. Heat the oil in a frying pan and add the squid and chillies. Fry for 1-2 minutes, until the squid turns opaque (no longer or it will become tough). Remove with slotted spoon and set aside.
  2. For the dressing, place all of the dressing ingredients into a bowl and mix well.
  3. To serve, place the squid mixture into a large bowl. Add the bananas, toasted sesame seeds and the dressing and stir well.
