Spinach Vegetable Soup Recipe

  • 4 cups water, divided
  • 1 1/2 teaspoons no salt instant beef bouillon
  • 3 tablespoons uncooked converted rice
  • 1/4 cup chopped onion
  • 1 (16 ounce) package mixed frozen vegetables ( broccoli, corn, red pepper)
  • 1/2 cup frozen chopped spinach, thawed and drained
  • 1 1/2 cups seeded, chopped fresh tomatoes
  • 2 tablespoons prepared no salt garlic herb seasoning blend
  • Morton® Salt Substitute, to taste
  • Pepper to taste
  1. Combine 2-1/2 cups water, bouillon, rice and onions in saucepan. Bring mixture to boil; reduce heat. Simmer 15 minutes; add vegetables.
  2. Continue cooking 5 to 10 minutes or until vegetables are cooked to desired doneness. Stir in remaining water, spinach, fresh tomatoes and seasoning blend. Season to taste with Morton Salt Substitute and pepper.
