Spinach Shrimp Salad with Miso Dressing Recipe

  • 1/4 cup rice wine vinegar
  • 2 tablespoons honey
  • 2 tablespoons white miso paste
  • 1 tablespoon soy sauce
  • 1 1/2 teaspoons white sugar
  • salt and ground black pepper to taste
  • 1/2 cup canola oil
  • 1 teaspoon sesame oil
  • 1/2 cup chopped green onions (scallions)
  • 3 cups fresh spinach
  • 1 (16 ounce) package cooked shrimp
  • 1 tablespoon sesame seeds
  1. Combine vinegar, honey, white miso paste, soy sauce, sugar, salt, and pepper in a blender; blend until smooth. Add canola oil and sesame oil; blend until dressing is emulsified and thick.
  2. Pour dressing into a large bowl; stir in green onions. Add spinach and toss to coat.
  3. Transfer spinach to a serving plate. Arrange shrimp on top. Sprinkle sesame seeds over shrimp.
