- 50g/1¾oz spinach
- 50g/1¾oz walnuts, chopped
- ¼ onion, finely chopped
- 2 tbsp olive oil
- salt and freshly ground black pepper
- 2 tsp red wine vinegar
- 1 slice streaky bacon, grilled until crisp, to serve
- Place all the ingredients except the bacon into a bowl and stir well to coat the spinach leaves.
- To serve, top with the bacon.
