Spinach salad with bacon and walnuts Recipe

  • 50g/1¾oz spinach
  • 50g/1¾oz walnuts, chopped
  • ¼ onion, finely chopped
  • 2 tbsp olive oil
  • salt and freshly ground black pepper
  • 2 tsp red wine vinegar
  • 1 slice streaky bacon, grilled until crisp, to serve
  1. Place all the ingredients except the bacon into a bowl and stir well to coat the spinach leaves.
  2. To serve, top with the bacon.
