- 1 tbsp olive oil
- 2 handfuls fresh spinach
- 2 garlic cloves, chopped
- 200g/7oz ready-made mashed potato
- Heat the oil in a pan and add the spinach and garlic. Cook for 2-3 minutes, or until the spinach has wilted.
- Stir in the cooked mashed potato and cook for a further 3-4 minutes, or until warmed through. Serve.
