- 100g/3½oz green beans, blanched
- handful baby spinach leaves
- ¼ onion, finely chopped
- 1 tbsp olive oil
- ½ lemon, juice only
- salt and freshly ground black pepper
- Place the beans, spinach and onion into a bowl and pour over the oil and lemon juice. Season, to taste, with salt and freshly ground black pepper and mix well to coat.
- To serve, place the salad onto a plate.
