Spicy Pork and Beans Stew Recipe

  • 1 tablespoon olive oil
  • 3/4 pound lean pork tenderloin, cut into 1-inch pieces
  • 1 green bell pepper, chopped
  • 1 large onion, chopped
  • 6 cloves garlic, minced
  • 2 jalapeno chile peppers, seeded and minced
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon ground red pepper
  • 1 (14.5 ounce) can low-sodium diced tomatoes. with juice
  • 1 (14.5 ounce) can diced tomatoes with chile peppers, with juice
  • 2 (16 ounce) cans red kidney beans
  • 1 (16 ounce) can black beans
  1. Warm oil in a large nonstick saucepan over medium heat. Add pork and cook until no longer pink. Stir in bell pepper, onion, garlic, chile peppers, chili powder, cumin, black pepper, and red pepper. Cook 8 minutes, or until vegetables are tender.
  2. Stir in diced tomatoes (with juice), diced tomatoes with chiles (with juice), kidney beans, and black beans. Cook 10 to 15 minutes, or until flavors are blended.
