Spicy mussel spaghetti Recipe

  • 50ml/2fl oz olive oil
  • ½ chilli, finely chopped
  • 1 clove garlic, finely chopped
  • 3 spring onions, chopped
  • 100g/3½oz spaghetti, cooked
  • 25g/1oz mussels, cooked
  • 1 tsp fresh parsley, chopped
  • salt and freshly ground black pepper
  1. Heat the oil in a wok over a medium heat and fry the garlic, chilli and spring onion until soft.
  2. Add the spaghetti and mussels, season well with salt and freshly ground black pepper and mix together.
  3. To serve, transfer the spaghetti into a serving bowl and sprinkle over parsley.
