- 2 1/4 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1 cup firmly packed brown sugar
- 1/2 cup Filippo Berio Olive Oil
- 1 1/2 cups applesauce
- 1 cup raisins
- 1 cup coarsely chopped walnuts
- Powdered sugar or sweetened whipped cream (optional)
- Preheat oven to 375 degrees F. Grease 9-inch square pan with olive oil.
- In medium bowl, combine flour, baking soda, cinnamon, nutmeg and cloves. In large bowl, mix brown sugar and olive oil with electric mixer at medium speed until blended. Add applesauce; mix well. Add flour mixture all at once; beat on low speed until well blended. Stir in raisins and nuts. Spoon batter into prepared pan.
- Bake 20 to 25 minutes or until lightly browned. Cool completely on wire rack. Cut into squares. Serve plain, dusted with powdered sugar or frosted with whipped cream, if desired.
