- 25 fresh mint leaves
- 3 tsp white sugar
- 1 lime, chopped
- 65ml spiced rum
- ginger beer, to top up
- sprig fresh mint, to garnish
- slice fresh ginger, to garnish
- Place the mint, sugar and lime into a sturdy tall glass and mash (muddle) with the end of a clean rolling pin.
- Add the spiced rum and a scoop of crushed ice. Mix throughly with a tall spoon and top up with ginger beer.
- Garnish with a sprig of mint and a thin slice of fresh ginger.
