Spiced berry whip Recipe
- 100ml/3½oz spiced berry cordial
- 250ml/9fl oz Greek yoghurt
- ½ orange, zest only
- 150ml/¼pt double cream
- 2 free-range egg whites, whisked until soft peaks form
- 1 ready-made meringue nest, crushed
- sprig mint, to decorate
- icing sugar, to dust
- Pour the cordial into a tall glass.
- Place the yoghurt, orange zest, double cream, whisked egg whites and meringue into a bowl and mix together.
- Spoon the mixture into a piping bag. Dip the piping bag into the cordial at the bottom of the glass and squeeze out the cream mixture all the way up to the top.
- Garnish with mint and dust with the icing sugar.
