Speedy Minestrone Soup Recipe

  • 1 (49.5 fluid ounce) can reduced-sodium chicken broth
  • 1 (28 ounce) can pear-shaped tomatoes
  • 2 cups chopped zucchini
  • 1 cup elbow macaroni
  • 8 ounces cubed Safeway SELECT Sonoma Jack Cheese
  • 1 (7 ounce) container Safeway SELECT Verdi Classic Pesto
  • Safeway SELECT Verdi Shredded Parmesan Cheese
  1. Pour broth into a 5- to 6-quart pan. Add tomatoes (break up with a spoon) and their liquid, zucchini, and macaroni.
  2. Cover and bring to a boil over high heat. Then reduce heat and simmer until pasta is tender to bite (18 to 20 minutes).
  3. Ladle soup into bowls and add jack cheese. Pass bowls of pesto and parmesan cheese to add to individual servings to taste.
