- 3 cups (24 oz.) water
- 4-inch piece (1 inch in diameter) peeled ginger, thinly sliced
- Zest of 2 large lemons
- 2/3 cup sugar
- 1/3 cup (scant 3 oz.) honey
- 6 large mint leaves
- 6 whole cloves
- 1 cup (8 oz.) fresh lemon juice
- About 3 cups (24 oz.) chilled ginger ale
- 6 mint sprigs for garnish
- In a medium saucepan, combine water, ginger, lemon zest, sugar, honey, mint leaves, and cloves; bring to a boil. Reduce heat; cover and simmer for 10 minutes. Remove from heat; cool to room temperature. Strain into a pitcher; stir in lemon juice. Cover and refrigerate until chilled, about 3 hours. To serve, place 3 to 4 ice cubes in tall glasses. Fill halfway with Gingerade; top with ginger ale, stirring gently. Garnish with mint sprigs.
