Spanish Rice and Chicken Burritos Recipe

  • 1 (6.8 ounce) package Spanish-flavored rice
  • 1 (14.5 ounce) can diced tomatoes
  • 1 cup shredded cooked chicken, (from an Archer Farms oven-roasted chicken)
  • 3/4 cup Archer Farms™ bean dip
  • 3/4 cup fresh cilantro leaves
  • 6 (10 inch) tortillas, heated
  1. Cook rice according to package directions with tomatoes. Stir in chicken during the last 5 minutes of cooking time.
  2. On tortilla, layer 2 tablespoons bean dip, about 3/4 cup chicken and rice mixture, and 2 tablespoons fresh cilantro leaves.
  3. Fold in sides of tortilla and roll from bottom to create a burrito.
