Soy Turkey Brine Recipe

  • 4 cups water
  • 1/2 cup soy sauce
  • 2 tablespoons sweet rice wine (found in the Asian foods aisle) or sake
  • 2 tablespoons sugar
  • 3 cloves garlic, minced or pressed
  • 2 teaspoons hot chili flakes
  1. Mix water, soy sauce, sweet rice wine (found in the Asian foods aisle) or sake, sugar, minced or pressed garlic cloves, and hot chili flakes.
  2. Place meat in a plastic food bag (choose small cuts like pork chops, chicken breasts, or turkey breast slices), pour in brine to cover, then seal and chill 6 to 12 hours.
  3. Discard used brine; cook meat as desired.
