Southwestern Cavatappi Recipe

  • 1 pound 95% lean ground beef
  • 1 (16 ounce) jar TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa
  • 1 medium zucchini, chopped
  • 1 teaspoon chili powder
  • 3 cups cavatappi pasta or any corkscrew noodles
  • 1 (11 ounce) can no-salt-added whole kernel corn, drained
  • 1 cup KRAFT 2% Milk Shredded Cheddar Cheese, divided
  • 1 tablespoon lime juice
  • 1/4 cup chopped cilantro or fresh parsley
  1. Brown meat in large skillet sprayed with cooking spray on medium-high heat, stirring frequently; drain. Add salsa, zucchini and chili powder; mix well. Reduce heat to low; simmer 10 minutes, stirring occasionally. Meanwhile, cook pasta as directed on package.
  2. Add corn and 1/2 cup of the cheese to the meat mixture; cook 3 minutes or until cheese is melted, stirring frequently.
  3. Drain pasta; place in large bowl. Add meat mixture, lime juice and cilantro; mix lightly. Sprinkle with remaining 1/2 cup cheese. Serve with lime wedges, if desired.
