- 1 pound ground beef
- ½ pound ground pork sausage
- ½ cup chopped yellow onion
- ½ cup chopped red bell pepper
- ½ cup chopped green bell pepper
- 2 garlic cloves, minced
- ½ cup quick-cooking oats
- 1 can (4 ounces) diced green chiles, drained
- ½ cup tomato juice
- 1 large egg, lightly beaten
- 1 teaspoon chili powder
- ½ teaspoon ground cumin
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon freshly ground pepper
- Fresh Tomato Salsa or purchased salsa for serving
- Sour cream for serving
- Preheat the oven to 350°F. In a large bowl, combine all the ingredients except the salsa and sour cream and mix well. Turn the mixture into a lightly sprayed or oiled 9-by-5-inch loaf pan and gently pat down. Bake until the loaf is firm and the top is lightly browned, about 1 hour. Let stand in the pan for 5 to 10 minutes before serving. Remove the loaf from the pan and slice to serve. Serve with the salsa and sour cream.
