Southwest Meatloaf Recipe

  • 1 pound ground beef
  • ½ pound ground pork sausage
  • ½ cup chopped yellow onion
  • ½ cup chopped red bell pepper
  • ½ cup chopped green bell pepper
  • 2 garlic cloves, minced
  • ½ cup quick-cooking oats
  • 1 can (4 ounces) diced green chiles, drained
  • ½ cup tomato juice
  • 1 large egg, lightly beaten
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground pepper
  • Fresh Tomato Salsa or purchased salsa for serving
  • Sour cream for serving
  1. Preheat the oven to 350°F. In a large bowl, combine all the ingredients except the salsa and sour cream and mix well. Turn the mixture into a lightly sprayed or oiled 9-by-5-inch loaf pan and gently pat down. Bake until the loaf is firm and the top is lightly browned, about 1 hour. Let stand in the pan for 5 to 10 minutes before serving. Remove the loaf from the pan and slice to serve. Serve with the salsa and sour cream.
