Southwest Corn on the Cob Recipe

  • 4 ears fresh corn-on-the-cob
  • 1/4 cup Market Pantry™ butter, softened
  • 1 chipotle chile in adobo sauce
  • 1 tablespoon chopped cilantro
  1. Heat grill.
  2. In small bowl, mix butter, chipotle chile and cilantro. Cover and refrigerate until ready to use. Soften before serving.
  3. Remove all but innermost husks from corn. Fold back inner husks and remove corn silk. Rewrap inner husks around corn.
  4. When grill is heated, place corn over medium heat. Cook for 10 to 15 minutes, or until corn is tender and husks are slightly brown. Serve immediately with mixture.
